Ingredients
2 cups fresh raspberries
1/2 cup raisins
1/2 cup unsweetened shredded coconut
1/2 cup raw pumpkin seeds
1/4 cup (72 milliliters) maple syrup
4.5 cups cooked couscous
Directions
Add raspberries, raisins, shredded coconut, pumpkin seeds and maple syrup to warm, cooked couscous. Mix well and serve

If you have never been to LCCC's dental hygiene clinic, you're missing out on a great opportunity! Our dental hygiene clinic is located in downtown Nanticoke. Our LCCC student dental hygienists are in need of patients so they can master their skills. In return, you receive a FREE dental hygiene appointment that includes dental cleaning, periodontal evaluation, oral cancer screening, dentist exam, X-rays (if needed), fluoride, and polishing. Students are supervised by licensed dental hygienists and dentists. The appointments may be 4 hours long, but we know you will be very satisfied with the quality of our students' services. The LCCC 2025 Communication Arts Student Art Exhibition will be presented in the Schulman Gallery of Luzerne County Community College and will run from Friday, May 09, 2025 through Friday, June 06, 2025. The Exhibition will feature original artworks created by students currently enrolled in the Communication Arts program of LCCC.
LCCC Communication Arts Students that wish to participate in the LCCC 2025 Communication Arts Student Art Exhibition may submit up to TWO original artworks in any of the following categories: Painting, Photography, Mixed-Media, Illustration, Sculpture, Digital Art, and Music Recording Technology. Artworks that are accepted for inclusion in this exhibition are eligible to compete for the PRESIDENT'S CHOICE AWARDS. One winner from each category will be selected to receive the Presidentâ??s Choice Award for the respective category including one Best of Show Award and one Best Portfolio Award.

Nominations are now being accepted for both the Outstanding Graduate Award and the Outstanding Adult Learner Award. These prestigious awards will be presented during the May 2025 Commencement Ceremony.
If you know a student who will be graduating in May that has done exceptionally well while at LCCC, please take this opportunity to nominate them for one of these graduate awards. Once nominated, we will contact the student for more information. The nomination deadline for both awards is Friday, April 4, 2025.

Recipe: Oat-Banana Breakfast Cookies
Ingredients
3 bananas, peeled
1/4 cup coconut oil, melted
1 tablespoon maple syrup
1 teaspoon vanilla extract
1.5 cups rolled oats (gluten-free, if needed)
1 tablespoon golden flaxmeal
1/2 teaspoon salt
1/4 cup mini chocolate chips
Directions
1. Preheat oven to 350F
2. Place bananas in a medium bowl and mash well. Add remaining ingredients to mashed banana; stir well.
3. Line a baking sheet with parchment paper. Press 2 tablespoons mixture into a 2.5-inch cookie cutter. Remove cutter to create a round shape. Repeat with remaining mixture.
4. Bake for 22 to 25 minutes or until cookies are golden and set. Allow to cool before serving.

Recipe: Easy Fish Tacos Recipe
Ingredients
6 whole-wheat flour tortillas
1 12-ounce can tuna packed in water, drained
2 cups shredded iceberg lettuce
2 medium tomatoes, chopped
1 small onion, chopped
4 ounces grated, reduced-fat Monterey Jack or cheddar cheese
Taco sauce or fat-free sour cream (optional)
Directions
Place two heaping tablespoons of tuna across the middle of each tortilla.
Add lettuce, tomatoes, onion and cheese to each taco.
Fold in half, and serve with taco sauce and sour cream (optional).
Cooking Notes
For a flavor variation and plant-based version, substitute low-fat refried beans for tuna and toss in a few sliced black olives. If you're lactose intolerant or vegetarian, use non-dairy cheese shreds or omit the cheese.

Ingredients
1/4 cup (52 milliliters) low-sodium vegetable broth
1/2 cup onion, diced
1 cup white button or cremini mushrooms, thinly sliced
1 cup bell pepper, diced
1/4 teaspoon salt
1/2 cup (115 milliliters) canned tomato sauce
1/2 cup canned refried beans
1 cup shredded cheese (dairy or non-dairy), divided
1/2 cup fresh tomatoes, diced and divided
2 10-inch whole-wheat tortillas
Directions
1. Heat vegetable broth in a saucepan over medium heat. Add onion, mushrooms, bell pepper, salt and black pepper. Cook for about 5 minutes, stirring occasionally, until vegetables become soft and most of the broth has evaporated.
2. Meanwhile, mix the tomato sauce and refried beans in a microwave-safe bowl until well combined. Cover and cook in the microwave on high for 1 minute.
3. Place tortilla in a large skillet over low heat. With the back of a spoon or a rubber spatula, spread half of the refried bean and tomato sauce mixture onto the tortilla to make a thin, even layer. Then, layer on �¼ cup cheese and �¼ cup diced tomatoes. Add half the cooked vegetable mixture on top and sprinkle on another �¼ cup cheese.
4. Cook 3 to 5 minutes or until the bottom of the tortilla has turned slightly crispy and the cheese has mostly melted. Remove the tortilla pizza from the skillet and repeat the process with the other tortilla. Slice pizzas in half or quarters and serve immediately.

LCCC-Public Safety Training Institute will be hosting the Pilot Mind Drone Training Program FAA Part 107 Classes Begin April 21st

Recipe: Espresso Vanilla Bean Chickpea Blondies Recipe
Ingredients
Cooking spray
1.5 cups canned chickpeas, drained and rinsed
1/3 cup creamy no-stir peanut butter
1/2 cup brown sugar, packed
1 tablespoon vanilla bean paste
2 tablespoons instant espresso powder
1/4 cup quick oats
2 tablespoons ground flaxseed
1/4 teaspoon baking soda
1/4 teaspoon baking power
1/2 teaspoon kosher salt
Pinch flaky salt for topping (optional)
Directions
1. Preheat oven to 350F. Prepare an 8.5-by-4.5-inch loaf pan with cooking spray and line with parchment paper. Set aside.
2. Add chickpeas, peanut butter, brown sugar, vanilla bean paste, espresso powder, oats, flaxseed, baking soda, baking powder and salt to a food processor and blend until thoroughly combined and smooth, scraping sides one to two times during processing. Transfer batter to loaf pan and smooth top with spatula. Bake for 30 minutes, or until top is set.
3. Allow blondies to cool in the pan on a wire rack for at least 20 minutes. Lift parchment paper, transfer blondies to cutting board and cool for 15 minutes. Use a knife to cut into eight squares. Store leftover squares in an airtight container in the refrigerator.

Recipe: Apple Cinnamon Baked Oatmeal Recipe
Ingredients
1.5 cups fat-free milk or soy milk
1/2 cup packed brown sugar
1/2 cup egg substitute or egg whites
1 tablespoon melted trans-fat-free margarine
1/2 teaspoon cinnamon
2 cups rolled oats (not instant)
1 teaspoon baking powder
1.5 cups chopped apples
Directions
1. Preheat oven to 350F.
2. In a small bowl mix the milk, brown sugar, egg substitute or whites, margarine and cinnamon.
3. In a larger bowl, combine oats and baking powder.
4. Pour the wet mixture into the bowl with the oats; add apples and stir to combine.
5. Spoon the mixture into a 8-by-8-inch pan coated with cooking spray and bake for 30 to 40 minutes, until the top is firm and a toothpick comes out clean in the center.

Recipe: Honey Walnut Shrimp
Ingredients
2 tbsp water
2 tbsp light brown sugar
1/2 c walnuts, coarsely chopped
1 pound jumbo peeled, deveined raw shrimp
1 tbsp honey
2 tbsp extra-virgin olive oil, divided
2 1/2 tbsp mayo
1 tbsp lemon juice
1/2 tsp ground pepper
1/2 tsp salt
1/2 c sliced scallions
2 c hot cooked brown rice or white rice (Optional)
Directions
Step 1 - Bring water and brown sugar to a simmer in a large nonstick skillet over medium heat; cook until the sugar is completely dissolved, about 2 minutes. Stir in walnuts; cook, stirring often, until the sugar is golden and caramelized, about 2 minutes. Spread the walnuts evenly on a parchment paper-lined plate. Wipe out the pan.
Step 2 - Stir shrimp, honey and 1 tablespoon oil together in a bowl. Return the skillet to medium-high heat. Add the shrimp mixture; cook, stirring occasionally, until the shrimp are well browned and cooked through, about 4 minutes. Remove from heat. Combine mayonnaise, lemon juice, pepper, salt and the remaining 1 tablespoon oil in a small bowl; add to the shrimp mixture in the pan, stirring to coat. Recipe: Blueberry Overnight Oats
Ingredients
2 cups old fashioned rolled oats
2 tbsp chia seeds
2 1/2 cups unsweetened almond milk
3 tbsp pure maple syrup
1 cup fresh blueberries
Directions
Place the oats, chia seeds, almond milk and maple syrup in a large bowl. Stir together until combined. Cover with plastic wrap and store in the fridge overnight.
In the morning, stir in blueberries, leaving some for garnish and divide into jars or bowls.
Top with blueberries, coconut flakes or any other add-ins of your choice, serve and enjoy.

Brain-boosting Recipe: Pear and Blueberry breakfast bowl
Ingredients: 1 firm but ripe red-skinned pear (unpeeled)
2 tbsp oats
150g pot 0% fat bio-yogurt
3 tbsp skimmed milk
1 tbsp pumpkin seeds
2 handful blueberries
Instructions:
Grate the pear into a bowl and add the oats, half the yogurt, the milk and most of the seeds. Leave for 5-10 mins, then check the consistency and dilute with a little more milk or water if it is too thick. Spoon on the remaining yogurt, pile on the berries and remaining seeds, then serve.
