Nominations are now being accepted for both the Outstanding Graduate Award and the Outstanding Adult Learner Award. These prestigious awards will be presented during the May 2025 Commencement Ceremony.

If you know a student who will be graduating in May that has done exceptionally well while at LCCC, please take this opportunity to nominate them for one of these graduate awards. Once nominated, we will contact the student for more information. The nomination deadline for both awards is Friday, April 4, 2025.

The criteria and nomination forms are on the College's website.

Tip: Another way to connect with food includes learning about the traditions or history behind what you're eating. Whether a food is traditional or new to you, learning more about how and why it's prepared can be a valuable experience. It may help build a connection to the person that prepared it, teach about sustainability, or provide information about how it affects your health.

Recipe: Black Bean-Quinoa Bowl

Ingredients
¾ cup canned black beans, rinsed
1 cup cooked quinoa
¼ cup hummus
1 tablespoon lime juice
¼ medium avocado, diced
3 tablespoons pico de gallo
2 tablespoons chopped fresh cilantro

Directions
1. Combine beans and quinoa in a bowl. Stir hummus and lime juice together in a small bowl; thin with water to desired consistency. Drizzle the hummus dressing over the beans and quinoa. Top with avocado, pico de gallo and cilantro.

The LCCC 2025 Communication Arts Student Art Exhibition will be presented in the Schulman Gallery of Luzerne County Community College and will run from Friday, May 09, 2025 through Friday, June 06, 2025. The Exhibition will feature original artworks created by students currently enrolled in the Communication Arts program of LCCC.

LCCC Communication Arts Students that wish to participate in the LCCC 2025 Communication Arts Student Art Exhibition may submit up to TWO original artworks in any of the following categories: Painting, Photography, Mixed-Media, Illustration, Sculpture, Digital Art, and Music Recording Technology.

Artworks that are accepted for inclusion in this exhibition are eligible to compete for the PRESIDENT'S CHOICE AWARDS. One winner from each category will be selected to receive the President's Choice Award for the respective category including one Best of Show Award and one Best Portfolio Award.

LCCC Communication Arts Students that wish to participate in this exhibition must visit the Schulman Gallery Website at: https://luzerne.edu/schulmangallery/ then go to UPCOMING EXHIBITS and/or CALL FOR ARTISTS to obtain and complete an Agreement Form and email up to 2 digital file images or music technology sound recordings of original artworks created by the Student/Artist to: schulmangallery@luzerne.edu for possible inclusion in the exhibition.
THE SUBMISSION DEADLINE IS FRIDAY, APRIL 11, 2025. Any submissions received after 04/11/2025 will not be accepted.

Broadway Street Bridge (Nanticoke/West Nanticoke) Temporary Closure for Bridge Inspection. The Broadway Street Bridge (Nanticoke/West Nanticoke) is scheduled to close Monday, March 17, 2025 and Tuesday March 18, 2025 from 8:00 AM to 4:00 PM.

Motorists are requested to utilize the South Cross Valley Expressway (SR29) as a temporary detour during the affected hours of closure. Detour signs will be installed during the closure.

Ingredients:
â?¢ Yogurt: Plain regular or plain Greek yogurt 2% higher fat is recommended for best taste.

Steps:

Recipe: Cauliflower Buffalo Bites
These Cauliflower Buffalo Bites are a healthier take on traditional buffalo wings. They are crisp, spicy, and perfect for snacking while watching the game. Loaded with vitamins and low in calories, they offer a guilt-free indulgence during March Madness.

Ingredients:
1 head cauliflower, cut into florets
1 cup whole wheat flour
1 cup water
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1 cup hot sauce
2 tablespoons unsalted butter, melted

Instructions:
1. Preheat your oven to 450 °F (230 °C) and line a baking sheet with parchment paper.
2. In a bowl, whisk together flour, water, garlic powder, onion powder, salt, and pepper to make the batter.
3. Dip each cauliflower floret into the batter, allowing excess to drip off, and place them on the baking sheet.
4. Bake for 15 minutes, then flip the florets and bake for an additional 10 minutes.
5. Meanwhile, in a separate bowl, mix hot sauce with melted butter.
6. Remove cauliflower from the oven and toss with the hot sauce mixture.
7. Return to the oven for another 10 minutes until crispy and browned.

Why It's Healthy: Cauliflower is a low-calorie, nutrient-dense vegetable that offers fiber and antioxidant benefits. This recipe reduces the need for deep frying, significantly lowering the fat content compared to traditional wings.

Recipe: Chicken Salad on Apple Slices

Ingredients
Cooked Chicken Breast: Lean protein source, shredded or diced. You can use a rotisserie chicken.
Celery: Adds crisp texture and a subtle flavor.
Mayonnaise: Creamy binding agent that balances flavors; can substitute with Greek yogurt.
Chicken Broth: Adds moisture without needed more mayonnaise, keeping it light.
Dried Cranberries: For tart sweetness and a burst of flavor
Red Onion: Provides a contrast to the dish's sweet and savory elements.
Sweet Red Apples: A sweet crunchy base, complementing the chicken salad's flavors.

How to Make It
It's surprisingly easy and can be prepared in advance, making it perfect for busy weekdays.

1. Prepare the Chicken Salad: In a medium bowl combine the chicken with celery, mayonnaise, chicken broth, cranberries and red onion, and stir until combined. Adjust salt and pepper to taste.
2. Slice the Apples: When ready to eat, slice the apples into 1/4 inch thick slices, then remove the seeds. (I used a piping tip). It�¢??s best to eat right away so they don�¢??t turn brown, but if you are planning to eat later, you can toss the apple slices in a little lemon juice.
3. Assemble: Spoon a generous amount of chicken salad onto each apple slice and enjoy!

Orders are due on Monday, March 10 and here are the details: The members of the LCCC Alumni Association are once again conducting their annual Gertrude Hawk Easter Candy Sale. This sale includes an extended discount of 30% off the catalog pricing to all staff, students and graduates.

The catalogs/packets have been distributed on campus to faculty and staff to those who have ordered during the last year. If you haven't ordered before and would like a catalog, please contact me or stop by my office (room 208G, Campus Center) or near the switchboard / admissions office in building 5 to pick up a packet later this week.

Here are some tips for connecting with food:
When purchasing food from a store, use a grocery list and pay attention to sales. When food is less processed, it's often more affordable.

Recipe:
Zucchini Pizza Bites

Ingredients
Cooking spray
1 medium zucchini
Kosher salt
1/4 cup marinara sauce
1/2 cup shredded mozzarella

Directions
Preheat the oven 400 degrees F. Line a baking sheet with aluminum foil and spray with cooking spray.

Slice the zucchini 1/4-inch thick; you should get about 24 slices. Place the slices on the prepared baking sheet and sprinkle with salt. Top each slice with 1/2 teaspoon marinara sauce and 1 teaspoon mozzarella.

Bake until the cheese is melted and bubbly, about 8 minutes

A nutrition education and information campaign sponsored annually by the Academy of Nutrition and Dietetics, National Nutrition Month, held annually in March, focuses attention on the importance of making informed food choices and developing sound eating and physical activity habits.

National Nutrition Month started in 1973 as National Nutrition Week, and it became a month-long observance in 1980 in response to growing interest in nutrition.

This year's theme is "Food Connects Us." Food is a connecting factor for many of us. Food connects us to our cultures, our families and our friends. Sharing a meal is an opportunity to learn about its preparation, who made it and where the ingredients were sourced. Whatâ??s more, health, memories, traditions, seasons and access can all impact our relationship with food.

The 43rd ANNUAL SUZANNE MARIA ROSSETTI MEMORIAL JURIED ART SHOW WINNER'S EXHIBITION will be presented in the Schulman Gallery of Luzerne County Community College and will run from Sunday, March 02, 2025 through Wednesday, April 09, 2025. There will be an Opening Reception on Sunday, March 02, 2025 from 1:00 to 4:00 p.m. in the Gallery (Snow Date-Sunday, March 09, 2025) which will include tours of the LCCC Communication Arts Department at 2:00 p.m. and 2:45 p.m. and a presentation of Special Awards at 4:00 p.m. in the James T. Atherton Gymnasium.

The exhibition is sponsored by Joe and Sue Hand and features artworks created by students in grades 7-12 in the Back Mountain, Tunkhannock, and Northwest Areas.

A variety of regular breakfast, snack and lunch options are available at a reasonable price with individual items ranging in price from $1.00 to $7.00 with some salad bar items priced by weight.

Premade breakfast sandwiches, fresh fruit, breakfast bars, fried appetizers, chicken tenders, fries, as well as salad bar with make your own and pre-made salad options, made-to-order sandwiches, burgers, and cheesesteaks are regular menu items. Daily made soups are also available.

Drink options include Ellis Coffee, Pepsi products - fountain and bottled, energy drinks, tea, Gatorade, milk, etc.

The LCCC Community Service Committee is collecting various non-perishable items to support the food pantry at the Victims Resource Center of Wilkes-Barre. We are colleting pasta, pasta sauce, peanut butter, mac and cheese, cliff bars, granola bars, deodorant, shampoo, toothpaste, cereal, oatmeal, soups and SpaghettiOs.

Donations can be dropped off outside of Student Life, Health Science Building, the library, and the student success center.

Donations are being accepted until March 5!

Esports Free Play Day this Thursday, February 27 from 10:00 am - 2:00 pm, in the Esports Arena on the 3rd floor of the Campus Center, Building 14. Come by, have some fun, and de-stress.
